This easy one-pan low-carb pork stir fry is made from healthy ingredients with flavours that won’t leave you craving for what it doesn’t have – carbs. Whenever my husband and I fall off our healthy eaten diet, we found that lowering our carb intake is a great way to kick-start our metabolism into shedding the pounds.

Diets Don’t Work – Healthy Lifestyle Changes Do
We successfully followed a low-carb/keto diet for a year and saw great results. I had more energy, focused better, and best of all, my husband and I lost a combined 70 lbs. We didn’t treat the low-carb/keto diet as a diet. For you to see lasting results, it really is a lifestyle change.
If you are a simple muse regular, you are probably wondering what happened to our low-carb lifestyle – especially if you noticed the menu section on sourdough. We embarked on a full kitchen reno in March 2020, which was scheduled to take 4-5 weeks to complete. We thought, no problem – a few weeks of eating out, and then we would get back to our low-carb lifestyle when our kitchen was done. Well, the pandemic was declared and the first round of lockdowns were ordered on the day our new kitchen cabinets were installed. We lived through the first 4 months of the pandemic without a functioning kitchen (no electricity, no running water, no countertops, no stove) living off of take-out and frozen dinners.
As restrictions lifted, we were able to bring the workers back to safely finish the job. As the pandemic dragged on, we (like many) turned to comfort food and sourdough. Bread is my weakness – always has been. I am ready to restart my low-carb journey and share all the recipes I’ve mastered along the way. 🙂

Why is Cauliflower Used So Much In Low-Carb Diets?
I shared some benefits to cooking with cauliflower in my post on Roasted Cauliflower Soup Recipe, but in a net shell it contains about 7% of carbs for the same portion of white rice. So 1 cup of cauliflower has 5 grams of carbs vs. 72 grams of 1 cup of white rice. It also contains high levels of water and fiber – making it a low-carb diet super star.

How to Make Low-Carb Pork Stir-Fry
Tools:
- Wok I love this one because it is lightweight and non-stick
- We love this brand of cauliflower rice
Ingredients:
- 1 tbsp cold-pressed olive oil
- 1 medium onion, chopped
- 2 lbs pork loin (roughly 3-4 chops), cubed
- 1/2 tbsp garlic, minced (2-3 cloves)
- 1 tsp ginger, minced
- 3-4 cracks each salt & pepper
- 2 cups broccoli and carrot, cut
- 1 pkg cauliflower rice (or 2 cups riced cauliflower)
- 1 tbsp soy sauce, low sodium
- 1/2 tbsp sesame oil
- 1 tsp each white and black sesame seeds
Steps:
- Add oil to the wok and heat over medium heat. Sautee the onions for 2 minutes.
- Next, add in the garlic, ginger, pork, and stir for another 2 minutes.
- Stir in the vegetables, cover if using fresh vegetables. Do not cover if using frozen vegetables to let the extra moisture evaporate.

- Add the cauliflower rice when vegetables are tender and pork is cooked through.
- Stir in the soy sauce, and sesame oil, mixing well to coat the riced cauliflower.
- The cauliflower rice only needs 2-3 minutes to cook. Don’t overcook or it will become mushy.
- Remove from heat and serve immediately.

Pork not your thing or just want to change up the meat. Try substituting the pork for any of the choices below:

- Large shrimp
- Chicken thighs

Low-Carb Stir Fry | One-Pan Meal
Equipment
- Large wok with lid
Ingredients
- 1 tbsp cold-pressed olive oil

- 2 cups brocholli and carrot, cut
- 1 pkg cauliflower rice (or 2 cups riced cauliflower)
- 1 tbsp soy sauce, low sodium
- 1/2 tbsp sesame oil
- 1 tsp each white and black sesame seeds
Instructions
- Add oil to the wok and heat over medium heat. Add in onions and stir for 2 minutes.
- Add in the garlic, ginger, pork, and stir for another 2 minutes.
- Stir in the vegetables, cover if using fresh vegetables. Do not cover if using frozen vegetables to let the extra moisture evaporate.
- When vegetables are tender and port is cooked through, add in the cauliflower rice, soy sauce and sesame oil. Stir to mix the sauces in well.
- The cauliflower rice only needs 2-3 minutes to cook. Don't overcook or it will become mushy.
- Remove from heat and serve immediately.

This looks delicious! I love homemade stir fry but haven’t tried it with cauliflower!
Cauliflower is great in stir-frys either riced like I showed in this recipe or even in bigger chunks (sometimes I don’t feel like shredding the cauliflower so I just use the bigger pieces) – still awesome!
