These pan-fried Brussel sprouts are simple and delicious. They pair well with steak or chicken but can easily be eaten as a salad on their own for lunch.

What are Brussel Sprouts?

Brussel Sprouts are part of the cabbage family of vegetables but are much smaller in size. Typically between 1.5 to 4 cm in size. The mini cabbages grow vertically on a stalk. Each plant can produce up to 100 Brussel sprouts. The vegetable was popular in Brussels, Belgium which is where it got its name.
How to remove the bitterness of Brussel Sprouts?
Brussel sprouts have a bad reputation for tasting bitter. The bitterness “gene” is trapped in the center of the sprout. Boiling or steaming the sprouts will release bitterness to the whole sprout. If you are not a fan of the bitter taste, it is better to slice the sprouts and either roast them or pan-fry them. This allows the bitterness to escape.

Ingredients
- 2 cups brussel sprouts, cleaned and sliced
- 1 medium onion, chopped
- 6-7 strips of bacon, sliced
- 2-4 cracks each of salt and pepper
- 1 tbsp olive oil
Cooking Instructions
- Slice ends off of Brussels, and remove any loose outer leaves. Slice the smaller sprouts in half and quarter the larger sprouts. This will help them cook more evenly.

- Peel and chop the onion.
- Slice the bacon.
- Warm a wok or large cast-iron pan over medium heat. Add olive oil.
- Add the sprouts, onion, and bacon to the pan. Given them a swirl to separate the onion and bacon pieces.

- Add salt and pepper to taste and stir again.
- Cook for about 15 minutes, until bacon, is cooked and sprouts are tender and slightly browned.
