My daughter loves cake, birthdays, cake, parties, cake, blowing candles and did I mention cake? Because of her obsession with cake, we are forever baking some kind of dessert. We stopped making full sized cakes and have mastered the art of making small portion cakes (our waist is thankful). In this post I share one of our small sprinkle celebration cake creations. This recipe is both little and big kid approved.

Why a Celebration Cake
We call this cake a celebration cake because over the course of the Covid-19 pandemic lockdowns, we started focusing more on celebrating all the small wins in life. The isolation has been really tough for my outgoing, friend and animal loving 4 year old. So when she wants have yet another celebration party and invite her parents and puppy and imaginary friends, we go all out to accommodate. The cakes have gotten smaller but the celebrations are no less special. So the next time you want to celebrate that small something – I suggest trying out this cake!
If sprinkles aren’t your cup of tea, leave them out of the recipe and enjoy this more dense cake as a side for your afternoon tea or coffee break!

Size the Cake to Suit Your Needs
We love making this cake because the ingredient proportions can easily be adapted to make any size cake needed. Since we tend to make cake often, it was important for us to create a recipe that works well in half sizes. Otherwise, I would need to invest in more stretchy pants and visit the dentist more often.
- Recipe as stated yields one 6″ cake, approx. 4-6 servings
- Double recipe ingredients to yield one 8″ or 9″ cake, approx. 10-12 servings
Making the Sprinkle Celebration Cake
Tools
Hand mixer or whisk
Medium-sized bowl
Ingredients (small 6″ size)
- 1 tsp coconut oil
- 1/2 cup sugar or substitute (I use Splenda)
- 1/4 cup softened butter (could also use melted but not hot coconut oil)
- 1 egg
- 1 tsp vanilla
- 3/4 cup all-purpose organic flour
- 3/4 tsp baking powder
- 1/4 cup milk (or milk alternative)
- 1/2 apple, chopped finely (optional – but I highly recommend)
- 1 tbsp sprinkles
Steps
- Preheat oven to 350°F. Grease a 6″ pan with coconut oil. or line a muffin pan with 4-6 liners.
- In a medium bowl, cream together the sugar and butter.
- Beat in the egg and the vanilla.
- Add in flour and baking powder and mix well.
- Lastly, stir in the milk until batter is smooth. The consistency of the batter will be more like dough vs. regular cake batter.

- Add in the chopped apples.
- You can either add the sprinkles now and mix into the batter or sprinkle them on top (Pictured was sprinkled on top before baking)
- Spoon batter into the prepared pan.
- Bake for 25 to 35 minutes for small 6″ cake. 20 – 25 minutes for cupcakes. 30 – 40 minutes for double batch using 8″ or 9″ pans.


Sprinkle Celebration Cake

- If you are going to add frosting or a glaze over the cake, make sure to cool completely before.
